Hey King,
I appreciate you taking the time to review this image closely - I very much respect your advice. I first tried to do this with the strip of peel but there was no way I could get it to hold the shape so I had to resort to PS. As you pointed out, the fringing was added to lighted the edges to make them seem thin. The sections in the back are just the centre strip reversed, flipped and stamped to make it look different from the front.
I see your point about the lighting and agree that it is too flat to be convincing.
I guess for the story part, it's the "how" that I saw this fit - again not so strong so I'm not expecting high marks on this one :)

<Long-winded comment> I've seen this same concept somewhere before. I'm sitting here trying to figure out how you did this. The two primary things I'm noticing, however, is the fringing on the edges of the apple peel and the two-dimensional lighting on the very important top of the apple--one shouldn't notice those things and maybe most people won't, but you are challenging me with this because this type of thing used to be my metier--I would have created this without Photoshop or retouching, though. I hope you did the same, but I don't think so.
To improve the lighting on this, IMHO, there should be clear tonal separation everytime the peel overlaps itself--either light on dark, or dark on light. Here you have very similar tones in the first overlap at the top. The fringing actually helps in a couple of places, but you don't want to use fringing to gain separation .
Ah, now I see that this is wax fruit that you've cut and (probably) hung on a string or propped or glued or wired into position. It wasn't shot on black--that's added in Photoshop. </Long-winded comment>
